The Story of The Hut
Set in the Byron Bay hinterland, The Hut is a Mediterranean-inspired restaurant built around a simple idea: food tastes better when it is shared.
Three friends, one dream
To share what hospitality means to us.
The eye contact.
The simplicity.
The joy of being here.
A smile.
Making people feel welcome.
You might pour your own water.
You might pour your own wine.
But when it matters most, we’ll be there.
Because for us, hospitality has never been about being formal or perfect.
It’s about making you feel at home.
This is The Hut.
From schoolhouse to The Hut
The Hut is housed in the former O’Possum Creek Schoolhouse, a weatherboard building with a long history in the local community.
The building also inspired The Hut’s logo, creating a connection between the old schoolhouse and its new life as a restaurant.
Today, it’s a place for good food, shared tables and long lunches in the Byron Bay hinterland.
Our Team
Our secret? It’s the people. The ones in the kitchen, behind the bar and on the floor, making The Hut what it is.
